100% Cabernet Franc from 45-year-old vines grown biodynamically and planted on light silt soils. Early harvest, about 15 days before the stage of maturity of a red wine. Manual harvest in the morning in cool temperatures. Long and gentle pressing in a pneumatic press, only the heart of the press is kept. Settling for 48 hours, start off the fermentation in vats, aging for 12 months in barrels that have seen several wines, and 6 months in vats.
