The Alta Alella Tallarol, unsulfurized 2021 comes from a vineyard above the metropolis of Barcelona. At 150-300 meters above sea level, the vineyards gently fall to the sea. Here the Pansa Blanca vines grow on Sauló-Eard, a sand-clay mixture with granite components. The vineyards are organically dispensed with. Pesticides are not necessary, as the fauna here (also in the form of the grass mosquito on the label) keeps the harmful insects in check. After the hand picking, the wine is fermented and matured in amphorae from Sauló-Earde as well as in eggs from a clay-crete mixture. Due to the shape of the cement eggs, a natural bâtonnage occurs by means of swirls during fermentation. After aging, the orange wine is unfiltered, unadorned and filled with no added sulphur.The Tallarol from Alta Alella appears in a strong yellow with a light trub and smells of pears, apples and fennel as well as mandarin zeste and almonds. On the palate, thanks to the mash fermentation, it has a decent grip, which harmonizes wonderfully in addition to the fine acidity. It is best to caraf the wine for some time so that it gets some air and serve it well chilled with moderately spicy Indian cuisine, such as cauliflower curry or with lemon chicken with sage and braised garlic.Tallarol is 100% Pansa Blanca (Xarel•lo). Unfined and unfiltered, with no added sulfites.
