Vino Cotto Stravecchio Occhio di Gallo is the result of long tradition and careful processing: following the harvesting of Verdicchio, Trebbiano, Montepulciano and Sangiovese grapes, hand pressing, slow boiling of the must and passage into wood for spontaneous fermentation. The result is an intense and aromatic wine for meditation and beyond.
The dark amber color (reminiscent of the hue of a rooster's eye) offers an intense and complex sense of smell with spicy odorous nuances of nutmeg, cinnamon and fruity dates and fig jam; sweet, warm, soft of good structure, balanced, intense and persistent with a long finish perfectly corresponding to the olfactory sensations. Cooked wine has a high antioxidant power due to the caramelization of sugars during the pasteurization of the must.
